Lemon Cherry Surprise Cupcakes


Cupcakes are such a fun recipe for any occasion! With Mother's Day just around the corner our lemon cherry surprise cupcakes would be a great recipe to make for mom!


Lemon Cherry Surprise Cupcakes

Ingredients:

Cream cheese mixture:

  • 1 Wind & Willow White Chocolate Cherry Dessert Mix (we sell at Petals)

  • 8 oz cream cheese, softened

  • 1/4 cup butter, softened

Cupcakes:

  • 1 box lemon cake mix

  • 1/2 cup butter, melted

  • 1 cup milk

  • 3 eggs

  • 2 tsp almond extract

Frosting:

  • 1 container lemon frosting

  • 2 tablespoon almond extract

Garnish:

  • Sprinkles

  • Sour cheeries

Directions:

  1. Mix Wind & Willow White Chocolate Cherry Dessert Mix with cream cheese and butter as directed on the package. Chill 2 hours.

  2. Preheat oven to 350 degrees

  3. Line 24 cupcake tins with paper cupcake liners

  4. In a large mixing bowl combine lemon cake mix, butter, milk, eggs, and 2 tsp almond extract. Beat on medium for two minutes. Scoop batter into cupcake liners and fill 2/3 full.

  5. Drop 1 rounded teaspoon of cream cheese mixture into each cup.

  6. Bake 15 -17 minutes

  7. Cool completely

  8. Combine frosting and 2 tablespoons almond extract in a bowl. Beat on low speed until creamy. Frost cupcakes. Garnish with Toasted Almond Topping from the Wind & Willow White Chocolate Cherry Dessert Mix, sprinkles and sour cherries.
