Cupcakes are such a fun recipe for any occasion! With Mother's Day just around the corner our lemon cherry surprise cupcakes would be a great recipe to make for mom!
Lemon Cherry Surprise Cupcakes
Ingredients:
Cream cheese mixture:
1 Wind & Willow White Chocolate Cherry Dessert Mix (we sell at Petals)
8 oz cream cheese, softened
1/4 cup butter, softened
Cupcakes:
1 box lemon cake mix
1/2 cup butter, melted
1 cup milk
3 eggs
2 tsp almond extract
Frosting:
1 container lemon frosting
2 tablespoon almond extract
Garnish:
Sprinkles
Sour cheeries
Directions:
Mix Wind & Willow White Chocolate Cherry Dessert Mix with cream cheese and butter as directed on the package. Chill 2 hours.
Preheat oven to 350 degrees
Line 24 cupcake tins with paper cupcake liners
In a large mixing bowl combine lemon cake mix, butter, milk, eggs, and 2 tsp almond extract. Beat on medium for two minutes. Scoop batter into cupcake liners and fill 2/3 full.
Drop 1 rounded teaspoon of cream cheese mixture into each cup.
Bake 15 -17 minutes
Cool completely
Combine frosting and 2 tablespoons almond extract in a bowl. Beat on low speed until creamy. Frost cupcakes. Garnish with Toasted Almond Topping from the Wind & Willow White Chocolate Cherry Dessert Mix, sprinkles and sour cherries.
